Embark on a refreshing journey to Taitung, Taiwan, with our delightful Hibiscus Rum Cooler. This exotic, flavor-packed cocktail is inspired by the stunning landscapes and laid-back atmosphere of Taitung. With a combination of white rum, hibiscus syrup, fresh fruit juices, and fragrant spices, the Hibiscus Rum Cooler is a perfect representation of this serene coastal city. Ingredients:
- 45ml (1.5 oz) of White Rum (we recommend a white rum like Bacardi Superior)
- 40ml (1.3 oz) of Hibiscus Syrup
- 30ml (1 oz) of Lemon Juice
- 15ml (0.5 oz) of Pomegranate Juice
- 10ml (0.3 oz) of Grapefruit Juice
- 10 Mint Leaves, 1 Sprig Rosemary, 1 Sprig Thyme
- Club Soda to finish
- Hibiscus & Butterfly Pea Flowers to garnish
For Hibiscus Syrup (makes 5 servings):
- 5g of Hibiscus Powder
- 2.5g of Smoked Salt
- 100g of Water
- 100g of Sugar
Instructions:
- Combine the Hibiscus Syrup ingredients in a small pot over heat then let cool.
- Take the Mint Leaves, Rosemary, Thyme, and cup them in your palm. Give them a couple of good slaps to release the oils then drop them in your shaker and lightly muddle.
- Add White Rum, Hibiscus Syrup, Lemon Juice, Pomegranate Juice, and Grapefruit Juice to the shaker, fill with ice, then cap and shake vigorously while looking nonchalant.
- Prepare a standard collins or old-fashioned glass and fill it with ice.
- Use the shaker’s strainer (or a Hawthorne Strainer) to fill your glass 3/4 full with the mixture.
- Top the glass with club soda, then use a bar spoon to gently lift the ice in the glass a little and allow the club soda to mix properly.
- Garnish with hibiscus and butterfly pea flowers then enjoy!
