Ingredients:

  • 45ml of Whisky (we recommend a good Japanese whisky like Mars Iwai)
  • 60ml of Matcha Honey Syrup
  • 45ml of Lemon Juice
  • Soda Water to finish
  • Cinnamon Stick, Dried Plum, and Star Anise to garnish

For Matcha Honey Syrup (makes 6 servings):

  • 200g of Clover Honey
  • 100g of Granulated Sugar
  • 70g of Water
  • 15g of Matcha Powder
  • 5 Cloves, 1 Cinnamon Stick, 1 Star Anise

Instructions:

  1. Combine the Matcha Honey Syrup ingredients in a small pot over heat then let cool.
  2. Add Whisky, Matcha Honey Syrup, and Lemon Juice to a shaker, fill with ice, then cap and shake vigorously while looking calm and collected.
  3. Prepare a standard highball glass and fill it with ice.
  4. Use the shaker's strainer (or a Hawthorne Strainer) to fill your glass 3/4 full with the mixture.
  5. Top the glass with club soda, then use a bar spoon to gently lift the ice in the glass a little allow the soda water to mix properly.
